Preparation and use of a poisonous fugu fish dish

The most dangerous delicacy in the whole world is fugu. This is the name of the dish of Japanese cuisine from certain types of poisonous fish of the Igrybrykh family.

These marine animals contain an extremely dangerous poison – tetrodotoxin. Fugu poisonous fish is a true legend of Japanese cuisine.

The chefs have learned to cook an extraordinary dish from a deadly animal that still attracts gourmets from all over the world, despite its danger.

Fugu poison a meager amount is used as a means of preventing age-related diseases and as a cure for diseases of the prostate gland.

The fish itself, from which this unusual dish is prepared, is called the puffer, fish-dog or puffer. Fugu fish looks very interesting.

The skin of its dark-brown color, covered with light spots. The average body length of an animal is about 30−40 cm, however, it is often possible to meet representatives of a length exceeding 50 cm.

Her body is not covered with scales.

The representatives of the igloo family are fed on the following:

  • algae and various protozoa;
  • small fish;
  • starfish.

If the puffer fish is scared, it will instantly swell and take a spherical shape, studded with sharp spikes. Due to this feature in this state, its dimensions increase threefold.

This discourages attacking fish. Even if the fugu is swallowed, then puffing up in the animal’s throat will cause its death.

Frightened scared fish instantly swells up and takes the form of a ball spiked with sharp spikes.

Fugu is the most poisonous fish in Japan. Due to the fact that the puffer contains a high dose of tetrodotoxin, every year there are dozens of deaths worldwide due to the use of this dish.

A logical question arises as to why the fugu poison does not stop the demand for this dish and people continue to put their health at risk.

Fugu is a delicacy, it is often used to “tickle your nerves”. The fact is that a properly cooked puffer dish leads a person to a state of mild euphoria, similar to narcotic.

At the same time some numbness of the limbs, tongue and palate is felt.

Fugu fish poison in the body is concentrated mainly in the following internal organs:

After penetration into the human body, it blocks the channels of nerve cells, helps to stop breathing and muscle paralysis.

There is no antidote today. But a person who is poisoned with a fugu poisonous fish still has a chance to survive if the victim is connected in time to artificial ventilation of the lungs.

It is necessary to wait for the end of the action of the poisonous substance, while maintaining the work of the circulatory and respiratory systems.

Numerous studies have shown that puffer can not independently produce neurotoxin, and acquires it with food. Their greatest concentration of poison is in the ovaries and liver.

Not every restaurant in Japan can taste this unique dish. In order to get the right to add a fish-dog to the menu, the sanitary inspectors must provide reports on the conditions and the amount of its storage.

And chefs, in order to have the right to prepare the pikefish, must pass the exam in two stages.: written and practical. To hand over it is extremely difficult, because you should know all the varieties of this sea animal, as well as to clearly study all the methods of detoxification.

And during the practical stage you need to prepare a puffer dish and eat it yourself.

Fugu fish (needlefish) is the most expensive and deadly dish of Japanese cuisine.

The representatives of the igloo family are prepared as follows:

  1. Wash the fish and make an incision around the mouth.
  2. Remove the eyes and cut off the spine in one sharp motion and place them in a separate tray.
  3. Gut it in such a way that the poison from the internal organs does not get on the meat. All organs removed are also stored in a separate tray.
  4. Then you need to turn the puffer on the belly and make a cut on the head in order to extract the brain.
  5. The remaining meat is filleted and can be cooked.

Currently, in some countries, this family of marine animals is artificially bred. They are fed food that does not contain tetrodotoxin, which makes the dish of puffer fish safe.

Despite this, people in Japan still prefer the poisonous toby, considering it more tasty and interesting for consumption.
